Canadian blended whiskies are known for their smooth, versatile nature, blending grain and malt whiskies to create a balanced and approachable spirit. They often boast a lighter, sweeter taste that’s perfect for sipping neat or mixing into cocktails. While Japanese distillers are renowned for their blending skills, the craft isn’t confined to us or them.
During my bourbon trail adventure in Kentucky, I had the chance to dive into this art myself at two standout distilleries: J. Mattingly 1845 Distillery and Whiskey Thief Distilling Co.
At J. Mattingly, where the distilling legacy began with John Graves Mattingly’s first distillery in 1845, I ventured into a charming basement filled with five distinct vertical barrels. After tasting these cask strength selections, I crafted my own blend—a unique 59.5% proof creation known as “Diony”. Visiting as a whiskey maker, they were fast to engage and answer all my questions. You walk in as a friend and leave as a family member -is a motto they abide by and deliver on!
Whiskey Thief Distilling Co., on the other hand, offers a true farm-to-glass experience. Nestled on scenic farmland, the distillery might test your GPS skills, but the journey is worth it. Inside a cozy barn, you’ll encounter a friendly dog, a Vendome copper pot still, and horizontal barrels laid out on a comfy Indian-style carpet -perfect to embark on a bourbon carpet ride! As you taste from various barrels and mash bills, you’re guided to create your own custom bottle.
Both distilleries may be hidden gems compared to giants in the area like Buffalo Trace or Maker’s Mark, but they offer a blending experience that’s both personal and memorable. You leave not just with a bottle, but with a story and a newfound appreciation for the craft and blending.
