
When you see a bottle of craft whisky priced at $100 or more, you might wonder what makes it worth the investment. But every bottle tells a story—one of tradition, artistry, and time.
At Diony Distillery, our whiskies are typically over 46% ABV and come in 750 ml bottles. To give some context, that’s roughly equivalent to 19 standard beers at 5%. So when you pay CAD$100 for a bottle, if it was put into a glass and carbonated with water at 5% ABV, you’re really paying about CAD$5.26 per “beer” – equivalent. Our whisky isn’t just about alcohol content—it’s about the depth of experience that comes from years of careful crafting. Such as great craft beer too!
We love to keep it craft, and our process actually begins the same way as beer (and can be referred to as beer during fermentation) —with a mash made from premium grains. But while beer is brewed and can be enjoyed quickly after fermentation, whisky takes a longer path. First, there is distillation in our copper still where it receives an added transformation to reach certain flavours that are the result of a long fermentation but also interaction with kilometers or miles of copper during distillation. Then it is carefully proofed down at entry proof before entering into barrels for ageing. During this time, we lose some whisky to evaporation—what’s called the “angel’s share” and some to the “devil’s cut” which is the alcohol entering into oak—but these losses makes what remains even more flavorful.
Craft whisky is a blend of tradition and innovation. Distilleries like ours go beyond basic regulations. Minimum requirements such as the building code is a far benchmark to where we want to arrive -building over the building code takes more effort and resources but the result is always worth it. How do we do this? By experimenting with longer fermentation times, paying attention to individual barrel ageing, blending, finishing barrels and unique techniques, always aiming to create a whisky that tells a story in every sip.
Of course, there are whiskies available at different price points, each offering something unique to the drinker. Whiskies priced at $30-$40 may be enjoyable for many, but our focus is on delivering a more refined experience for those who appreciate the additional time and effort we put into every bottle -a special occasion whisky.
