Every Barrel Tells a Story
At Diony Distillery, we’ve never been about mass production. Since laying down our first barrel in January 2019, every cask we’ve filled has been part of a small, hands-on process. When we put the spirits into the barrel, they typically start at 57-64% alc./vol., where the magic of aging begins. Today, we have just over 150 whisky barrels aging, along with around 20 barrels of our own house-made aged rum resting quietly in the corner.
Most of our casks come from a local cooper in Onoway, Alberta. He takes used wine barrels from BC and California, strips them down to fresh oak, bends the staves by hand, and toasts or chars them just right — anywhere from a light #1 to a deep #4. This gives us the freedom to shape every whisky the way we want it.
In our warehouse, you’ll find a mix of new American oak bourbon barrels, ex-bourbon casks, port casks from Portugal, sherry finish casks, and barrels that once held our own small-batch Diony rum. Those rum casks add a smooth, spiced finish to a few of our special releases.
And then there are a few barrels we’re keeping under wraps for now — special finishes we’re not quite ready to reveal. But when the time’s right, you’ll be the first to know.
If you’re blending your own whisky here, this is where it all starts. These are the casks behind the flavours — each with its own story, and all part of what makes Diony what it is.

Tasting Notes
Nose: Sweet notes of green apple candy, balanced by a crack of black pepper.
Palate: Smooth honeyed cereal and nutty warmth lead the way, with clove and rye spice adding a lively kick.
Finish: Earthy and dry, with a light herbal bitterness and a touch of lingering sweetness.

Tasting Notes
Nose: Dark, stewed berries, rich fig jam, and a hint of smooth vanilla.
Palate: Spicy ginger snap, honey-drizzled nuts, and luscious cherry compote.
Finish: Full-bodied, with warming oak spice and a deep, port-like richness.

Tasting Notes
Nose: Subtle toasted oak, campfire smoke, and deep dark toffee.
Palate: A warm rush of rye spice, grilled stone fruit sweetness, and a creamy, smoky undertone.
Finish: Dry, charred notes with a lingering hint of cocoa nibs.

Low Temperature Fermentation for 7-10 days to retain more aroma from the grain
